Asparagus officinalis, Purple Passion Asparagus not only has a striking deep purple color, but the spears are also sweeter than green varieties and less fibrous, more tender. Excellent for fresh eating from in the garden or salad. The spears turn green when cooked and have a nutty tastel, especially sauteed or grilled.
